Chicken: Tikka Thighs

YIELD 2 to 3 servings

INGREDIENTS

1 pound chicken thighs (with or without skin and bones)

MARINADE:
1 tbsp full-fat yogurt (any kind)
1/4 tsp ginger powder
1/4 tsp garlic powder
3/4 tsp chile powder or Aleppo pepper
3/4 tsp garam masala
3/4 tsp ground cumin
1/4 tsp ground turmeric
1/2 tsp salt
1 tbsp vegetable oil

PREPARATION

1. Add chicken and stir until completely coated. Using a fork, thoroughly stab the meat so the marinade may penetrate. Set aside for 30 minutes or cover and refrigerate overnight.

2. Broil for 7 to 10 minutes — flip and broil for another 7 to 10 minutes — until parts are charred and crisp on the outside.
